Ingredients :
- 1 kg of fresh strawberries (fully ripe for more flavor)
- 800 g of sugar
- The juice of a lemon
- 1 sachet of pectin (optional, if the strawberries do not contain enough natural pectin)
Preparation :
- Prepare the strawberries.
Wash the strawberries, hull them, and cut them into pieces. If you want an ultra-smooth jelly, you can quickly blend them to obtain a purée, but personally, I like to leave some pieces for more texture. - Cook the strawberries.
Place the strawberries in a large saucepan with the lemon juice and cook over medium heat until the strawberries begin to break down and release all their juice. This takes about 10 to 15 minutes. Once cooked, pass them through a sieve or cheesecloth to obtain a clear juice. - Add the sugar and pectin.
Return the juice to the saucepan and add the sugar and pectin (if using). Heat over low heat, stirring until the sugar is completely dissolved. Then, bring to a boil and cook for another 10 minutes until the jelly thickens slightly. - Jelly Test:
To check if your jelly is ready, perform the cold plate test: pour a drop of jelly onto a very cold plate. If it sets quickly, that's a good sign! If it remains too runny, let it cook for a few more minutes. - Jarring: Pour
the hot jelly into sterilized jars, seal tightly, and let cool. You can store your jars of strawberry jelly for several months in a cool, dry place.

I think this strawberry jelly is amazing with frozen yogurt or vanilla ice cream made with the Ninja Creami. If you want to make an even more decadent dessert, add a spoonful of jelly to white chocolate ice cream for the perfect sweet and fruity contrast. And for a little crunch, you can also add cookie pieces or toasted almonds on top!
