What you need:
- 200 ml of whole liquid cream
- 150 ml of whole milk
- 80 g of sugar
- 4 to 5 organic clementines (zest + juice)
- 100 g candied clementines (you can buy them or make them yourself)
- A few meringues (about 4 to 5 small meringues)
- 1 teaspoon of vanilla extract

Preparation :
- Prepare the ice cream base : In a saucepan, heat the milk and cream over low heat. Add the sugar and stir well until completely dissolved. Remove the pan from the heat.
- Add the clementines : Zest two clementines and squeeze them to obtain approximately 80 ml of juice. Add the zest and juice to the saucepan with the milk-cream mixture. Stir well to infuse everything with those lovely citrus flavors. Also adds vanilla extract for a smoother taste.
- Let it cool : Let the mixture cool to room temperature, then place it in the refrigerator for about an hour so that it is nice and cold before freezing.

Once the ice cream is ready, add the pieces of candied clementines and the meringue pieces. Use the “Mix-ins” mode to incorporate them well without crushing them.
