Preparation :

  1. Prepare the chestnuts.
    If you have cooked and peeled chestnuts, that's perfect! Otherwise, cook them in boiling water for about 20 minutes, then peel them carefully. It takes a little while, but it's so worth it.
  2. Heat the syrup.
    In a saucepan, combine the water, sugar, and split vanilla bean (or vanilla extract). Heat over medium heat until the sugar is completely dissolved and the syrup begins to simmer. Let it simmer for 5 minutes to allow the vanilla flavor to infuse.
  3. Add the chestnuts
    to the syrup and simmer over low heat for about 15 minutes. The chestnuts will absorb the sweet syrup and become incredibly tender.
  4. Blending:
    Once the chestnuts are very tender, remove the vanilla pod and blend everything with an immersion blender or in a blender until you obtain a smooth texture. For an even silkier cream, you can pass the purée through a fine sieve.
  5. Let it cool.
    Let the chestnut cream cool completely before pouring it into an airtight container. It keeps well in the refrigerator for about 1 to 2 weeks, but I bet it won't last that long!
