What you need:

  • 200 ml of whole milk
  • 100 ml of whole liquid cream
  • 3 egg yolks
  • 60 g of sugar (adjust to your taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg (fresh if possible for even more flavor)
  • 30 ml of rum (optional, but so good if you want a little festive side)

Preparation :

  1. Prepare the eggnog base : In a saucepan, heat the milk and cream over low heat, without letting it boil. In a separate bowl, whisk the egg yolks with the sugar until the mixture whitens and becomes very foamy. Can you already feel the greedy side coming? 😉
  2. Mix the two : Slowly pour the hot milk over the egg yolks, whisking constantly (this prevents the eggs from cooking straight away). Return everything to the saucepan and heat gently until the mixture thickens slightly, like custard.
  3. Add the spices and the rum : Off the heat, add the vanilla, cinnamon, nutmeg, and if you want a little pep, the rum. Mix well. This step is what gives all the flavor and soul of eggnog to your ice cream.
  4. Let it cool : Transfer the mixture to a container and let it cool completely. Once cold, pour it into your Ninja Creami pot.
  5. Freezing : Put your jar in the freezer for at least 24 hours. I know, it's hard to wait, but it's definitely worth it.
  6. The long-awaited moment : Once your preparation is completely frozen, install the pot in your Ninja Creami and choose the “Ice” mode. If the texture is not creamy enough for your taste, you can add a spoonful of milk and restart Re-spin mode.
