Ingredients
2 cups fresh lemon juice (about 6 lemons)
Zest of 2 lemons
3/4 cup water
1/2 cup granulated sugar
3 shots of water
Instructions
- In a saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved.
- Mix the fresh lemon juice and lemon zest into the simple syrup once it has cooled. Mix everything together.
- Pour the mixture into your Ninja Creami container.
- Leave to freeze for 24 hours.
- Blend using the Sorbet option. Once the cycle is complete, open the lid and add the 3 shots of water and run a re-spin cycle until you obtain a creamy texture.
- Serve in bowls or cones.

Notes
- For a touch of whimsy, you can add a drop of limoncello to the mixture
- Adjust the sweetness and acidity by changing the amounts of sugar and lemon juice. Sweeten with your preferred sweetener: brown sugar, agave syrup, maple syrup, artificial sweetener…
- If you prefer a smoother texture, strain the lemon mixture before churning it to remove the pulp and zest.
- Garnish with fresh mint leaves or lemon zest before serving for an extra touch of elegance.
