Yogurt ice cream, goji berries and pistachio pieces is a recipe that is healthy, delicious and full of textures. The yogurt provides a creamy and slightly tangy base, the goji berries add a sweet and fruity touch, and the pistachios provide an irresistible crunch. What you need:
- 300 g of natural Greek yogurt (or yogurt of your choice)
- 60g sugar (or honey for a more natural option)
- 1 teaspoon of vanilla extract
- 50 g goji berries
- 50 g shelled pistachios
- 100 ml of whole milk (or vegetable milk if you prefer)

Preparation :
- Rehydrate the goji berries : Place the goji berries in a bowl of warm water for about 10 minutes to rehydrate them. This will make them more tender and juicy. Once rehydrated, drain them and set them aside.
- Prepare the yogurt base : In a large bowl, mix the Greek yogurt, sugar (or honey), vanilla extract, and milk. Whisk well so that everything is perfectly incorporated and the texture is smooth. Milk gives a softer texture to the ice cream.
- Add goji berries : Stir rehydrated goji berries into yogurt mixture. They will bring a little sweet and colorful touch to each bite.
- Crush the pistachios : Coarsely crush the pistachios to obtain shards. Also add them to the preparation, keeping a small handful aside for the final decoration.
- Freezing : Pour the mixture into the Ninja Creami jar and put it in the freezer for at least 24 hours so that it sets well.
- Mix in the Ninja Creami : Once the mixture is well frozen, place the jar in the Ninja Creami and use the “Ice” mode. If the texture is a little too firm, you can add a teaspoon of milk and run a Re-spin cycle again to obtain a smoother consistency.
- Decoration and tasting : Once the ice cream is ready, serve it with a handful of pistachio pieces on top for even more crunch. You can also add some goji berries as a garnish for an extra touch of color.
