The apple caramel is a fruity version of traditional caramel. It combines the sweetness of the caramel with the tangy of apples, creating a smooth and fragrant sauce that accompanies vanilla, yogurt or caramel ice cream. Easy to prepare, it will quickly become a must to enhance your frozen desserts!

Ingredients :

  • 2 apples (Golden or Pink Lady, for their sweetness)
  • 200 g of sugar
  • 100 g of butter
  • 100 ml of whole liquid cream
  • 1 tablespoon of lemon juice
  • 1 pinch of salt

Preparation :

  1. Prepare the apples
    peel the apples, remove the heart and cut them into small pieces. Bring them back to a pan quickly with a small hazelnut of butter and lemon juice until they are slightly golden and melting. Reserve them.
  2. Prepare the caramel
    in a saucepan over medium heat, melt the sugar without stirring, until you get a golden caramel. Be careful not to let it burn.
  3. Add the butter
    once the caramel is ready, adds the butter cut into pieces out of the heat and stir until it is completely melted and the mixture is smooth.
  4. Incorporate the cream
    gently heat the liquid cream, then add it to the caramel, stirring constantly. Return the pan over low heat and mix until you get a creamy texture. (Be careful not to burn yourself with projections, the cream must be hot to avoid thermal shock).
  5. Add the apples
    adds the cooked apples to the caramel and stir well to coat the pieces of potatoes from this caramelized sauce. If you want a smooth apple caramel, you can mix the mixture with a blender diving at this stage. Otherwise, leave the pieces of apples for a more rustic texture.
  6. Let cool
    let the apple caramel cool before using it on your ice. It keeps in the refrigerator for about a week in an airtight container.

This apple caramel is perfect to accompany a vanilla or yogurt ice cream. I also love it on a chocolate ice cream or a nut ice for a contrast of textures and flavors.
