Apple caramel is a fruity twist on traditional caramel. It combines the sweetness of caramel with the tartness of apples, creating a smooth and fragrant sauce that pairs perfectly with vanilla, yogurt, or caramel ice cream. Easy to make, it will quickly become a staple for your frozen desserts!

Ingredients :
- 2 apples (Golden Delicious or Pink Lady, for their sweetness)
- 200 g of sugar
- 100g of butter
- 100 ml of full liquid cream
- 1 tablespoon of lemon juice
- 1 pinch of salt
Preparation :
- Prepare the apples.
Peel the apples, remove the cores, and cut them into small pieces. Sauté them quickly in a pan with a small knob of butter and the lemon juice until they are lightly browned and softened. Set them aside. - Prepare the caramel.
In a saucepan over medium heat, melt the sugar without stirring until you obtain a golden caramel. Be careful not to let it burn. - Add the butter.
Once the caramel is ready, remove from heat and add the butter cut into pieces, stirring until completely melted and the mixture is smooth. - Incorporate the cream.
Gently heat the heavy cream, then add it to the caramel, stirring constantly. Return the pan to low heat and stir until you obtain a creamy texture. (Be careful not to burn yourself with any splashes; the cream must be hot to avoid thermal shock.) - Add the apples.
Add the caramelized apples and stir well to coat the apple pieces with the caramelized sauce. If you want a smooth apple caramel, you can blend the mixture with an immersion blender at this stage. Otherwise, leave the apple pieces for a more rustic texture. - Let
the apple caramel cool before using it on your ice cream. It will keep in the refrigerator for about a week in an airtight container.

My Personal Tip:
This apple caramel is perfect with vanilla or frozen yogurt. I also love it on chocolate or nut ice cream for a contrast of textures and flavors. You can also use it to swirl cinnamon ice cream with Ninja Creami, or even drizzle it over crepes or pancakes with a scoop of ice cream for an ultra-indulgent dessert!
