Easy to make, it can be used as a base for chocolate ice cream or as a topping to add a gourmet touch to any frozen dessert.

Ingredients :

  • 150g unsweetened cocoa powder (preferably raw and good quality)
  • 100g caster sugar (adjust to taste)
  • 50 ml of water
  • 2 tablespoons neutral oil (like grapeseed oil)
  • 1 pinch of salt
  • 1 teaspoon vanilla extract (optional)

Preparation :

  1. Prepare the sugar syrup
    In a small saucepan, mix the water and sugar. Heat over medium heat until the sugar is completely dissolved, forming a light syrup. Then remove from the heat and let cool slightly.
  2. Mixing with the cocoa
    In a bowl, sift the cocoa powder to avoid lumps, then pour the sugar syrup over the cocoa, stirring gently. Mix well until you obtain a homogeneous and smooth dough.
  3. Add the oil and vanilla.
    Incorporate the oil into the mixture to give it a smoother, creamier texture. If you like vanilla, also add the extract to add a little extra aromatic touch. Mix well so that all the ingredients are well incorporated.
  4. Add a pinch of salt
    Salt, in small amounts, helps intensify the taste of the cocoa and balance the sweetness of the sugar. Add a small pinch and mix well.
  5. Store your cocoa paste
    Pour the cocoa paste into an airtight jar and store it in the refrigerator. It can be kept for several weeks, and you can reheat it slightly to soften it before use if necessary.

My Personal Tip:

This cocoa paste is just amazing for creating super intense chocolate ice cream with Ninja Creami. I love incorporating it directly into the base before churning, it gives a real explosion of flavor. If you want to play with textures, you can also use it to make marbling in vanilla or coffee ice cream. And for an even more delicious version, I advise you to add pieces of hazelnuts or toasted almonds... it changes everything!
