Fig jam, with its sweet and slightly caramelized flavor, is a true delight to use in desserts. Its smooth and rich texture pairs perfectly with creamy ice creams like vanilla, yogurt, or even chocolate. This homemade jam is easy to prepare and keeps for a long time, making it a wonderful addition to all your desserts.

Ingredients :
- 1 kg of fresh figs
- 500 g of sugar
- The juice of a lemon
- 1 vanilla bean (optional, but delicious!)

Preparation :
- Prepare the figs:
Wash the figs thoroughly, remove the stems, and cut them into quarters. If the figs are very ripe, you can leave them in larger pieces. - Mix with the sugar.
In a large saucepan, combine the figs, sugar, and lemon juice. If using a vanilla bean, split it lengthwise, scrape out the seeds, and add them to the mixture. Let it macerate for about an hour so the figs begin to release their juices. - To cook the jam,
bring the saucepan to a boil over medium heat, then reduce the heat and simmer for 30 to 40 minutes, stirring occasionally. The jam will thicken as the water evaporates and the figs break down. - Jam test:
To know if the jam is ready, do the cold plate test: place a drop of jam on a plate that has been previously placed in the freezer; if it sets quickly, it's ready! - Jarring: Pour
the hot jam into sterilized jars, seal them immediately, and turn them upside down for a few minutes to create a vacuum seal. Let them cool before storing.
My Personal Tip:
This fig jam is perfect for topping vanilla or yogurt ice cream, but also surprisingly delicious on fromage blanc or ricotta ice cream. For a bolder combination, try it on dark chocolate ice cream with a few chopped walnuts for an incredible mix of textures and flavors.
