The fishing coulis is a fruity sweetness which brings a delicately sweet flavor to your desserts. Perfect for accompanying creamy ice like vanilla, yogurt or even sorbets, it is easy to prepare and add a nice summer touch to your ice creations.

Ingredients :
- 4 ripe peaches (or 400 g of drained canned fisheries)
- 70 g of sugar (adjusts according to the softness of the peaches)
- 1 tablespoon of lemon juice
- 2 tablespoons of water
Preparation :
- Prepare the peaches
if you use fresh peaches, peel them and remove the nucleus. Then cut them into pieces. If you prefer canned fisheries, drain them well before using them. - Cook the peaches
in a small saucepan, put the pieces of peaches, sugar, lemon juice and water. Heat over low heat for about 10 minutes, until the peaches are very tender and start to decompose. - Mixing
mixes everything using a hand blender or in a blender until you get a smooth texture. If you prefer a more fluid coulis, pass it to sieve to withdraw any fibers. - Let cool
let the coulis cool to room temperature before using it on your ice cream. It keeps in the refrigerator for about a week in an airtight container.

My Personal Tip:
This fishing coulis is absolutely delicious on a vanilla or yogurt ice cream, but also perfect to accompany ice cream with red fruit or mango. For a more textured dessert, you can add pieces of fresh or grilled peaches to your ice cream. Personally, I also like to use it to marble a yogurt ice cream before turbinate with the Ninja Creami.
