Fruit mousse is an explosion of freshness in the mouth. Whether made from strawberries or raspberries, this mousse is light, fruity and perfect to accompany vanilla ice cream or frozen yogurt. Plus, it’s quick to make and only requires a few simple ingredients.

Ingredients :

  • 200 g strawberries or raspberries (or a mixture of both)
  • 50 g caster sugar (adjusted according to the sweetness of the fruit)
  • 1 tablespoon of lemon juice
  • 200 ml of cold whole liquid cream
  • 1 sheet of gelatin (optional, for a firmer mousse)

Preparation :

  1. Prepare the fruit
Start by washing the strawberries or raspberries, then mix them with the sugar and lemon juice until you obtain a very smooth puree. If you are using raspberries and want a seedless mousse, pass the puree through a sieve to remove the seeds.
  2. Optional: Prepare the gelatin
If you want a slightly firmer foam, soften the gelatin sheet in cold water for about 5 minutes. Squeeze it out and melt it in a small saucepan over low heat, then add it to the warm fruit puree.
  3. Whip the cream into whipped cream
In a very cold bowl, whip the whole liquid cream until you obtain a firm whipped cream. It is important that the cream is very cold to whip up easily.
  4. Incorporate the fruit puree
Once the whipped cream is ready, gently incorporate the fruit puree, lifting the cream with a spatula so as not to break the foam. Mix gently until you obtain a homogeneous and airy foam.
  5. Leave to cool.
Pour the mousse into glasses or small pots, then let it sit in the refrigerator for at least 2 hours so that it sets well. If you added gelatin, it will be a little firmer once cooled.
