Ingredients :
- 300 g whole hazelnuts (unsalted)

Preparation :
- Roasting the hazelnuts
Start by roasting the hazelnuts in the oven at 150°C for around 10 minutes. This brings out all their flavor and produces an even tastier hazelnut paste. Once roasted, let them cool slightly then rub them between your hands to remove the skins (you don't need to remove all the skins, just the majority). - Intensive mixing
Place the roasted hazelnuts in a blender. First mix until you obtain a fine powder, then continue to mix so that the natural oil of the hazelnuts is released. Little by little, the powder will turn into a paste. This may take a few minutes, so be patient! - Adjust the texture
If you find that the dough is too thick or dry, add a tablespoon of neutral oil to soften it. If you prefer a slightly sweet version, you can also add the sugar and continue mixing until you obtain a smooth paste. If you like the sweet-salty contrast, add a small pinch of salt to enhance the natural taste of the hazelnuts. - Store your hazelnut paste
Pour the hazelnut paste into an airtight jar and store it in the fridge. It keeps easily for several weeks, but I warn you, it is so good that you will probably eat it with a spoon before even using it in your ice cream!
