The kiwi coulis, with its tangy and slightly sweet flavor, brings a touch of intense freshness to your ice. Its fluid texture and its unique taste combine wonderfully with creamy ice like those with vanilla, yogurt or mango. Easy and quick to prepare, it is ideal for sublimating your frozen desserts.

Ingredients :
- 4 well ripe kiwis
- 50 g of sugar (adjusts according to the softness of the kiwis)
- 1 tablespoon of lemon juice
- 2 tablespoons of water
Preparation :
- Prepare the kiwis
peeling the kiwis and cut them into pieces. If the kiwis are ripe, their flesh will be more tender, which will facilitate the preparation of the coulis. - Cook the kiwis
in a small saucepan, put the kiwis pieces, sugar, lemon juice and water. Heat over low heat for about 5 to 10 minutes, until the kiwis are very tender and the sugar is dissolved. - Mixing
mixes everything using a hand blender or in a blender until you get a very smooth texture. If you prefer a seedless coulis, you can pass it to sieve to remove the small kiwi seeds. - Let it cool
Let the coulis cool before using it on your ice cream. It will keep in the refrigerator for about a week in an airtight jar.

My Personal Tip:
This kiwi coulis is incredible on a yogurt or vanilla ice cream, especially if you like the contrast between the tart and the creamy. It also works wonderfully with a strawberry or mango ice cream for a dessert full of freshness and colors. If you want an even more greedy dessert, adds coconut shards or dried fruit to play on textures!
