Ingredients :

  • 100g of fresh mint leaves (the fresher the better)
  • 250 g of sugar
  • 300 ml of water
  • A few drops of lemon juice (for a touch of acidity)

Preparation :

  1. Prepare your mint.
Start by rinsing the mint leaves well and letting them drain. They need to be very clean to infuse maximum flavor.
  2. Infuse the mint.
Heat the water in a saucepan until it just begins to simmer, then add the mint leaves. Let it steep for about 10 minutes off the heat. Breathe deeply; the scent of fresh mint is relaxing in itself!
  3. Add the sugar.
Strain the mixture to remove the mint leaves, then return the infused water to the heat. Add the sugar and stir well until completely dissolved.
  4. Add lemon juice.
A few drops of lemon juice to balance the sweet flavor and give it a little boost.
  5. Let it thicken.
Cook for a few more minutes to obtain a slightly thickened syrup. Once cooled, pour your syrup into a pretty bottle and store it in the fridge. And there you have it, homemade mint syrup ready to enhance your desserts!

If you've made lemon ice cream or even frozen yogurt with your Ninja Creami, this syrup will add a subtle touch of freshness that awakens the taste buds.

This syrup keeps easily in the fridge for three weeks, but between us, it's likely to disappear long before then! Feel free to tell me in the comments which Ninja Creami ice cream you paired it with.
