Ingredients

  • 200g of whole hazelnuts
  • 100g of good quality milk chocolate (the better the chocolate, the more delicious the dough will be)
  • 50g of dark chocolate (to balance the sweetness of the milk chocolate)
  • 100 ml of unsweetened condensed milk (for a creamy texture)
  • 2 tablespoons of hazelnut oil (or neutral vegetable oil)
  • 1 tablespoon of cocoa powder (to intensify the chocolate flavor)
  • 1 pinch of salt
  • 1 tablespoon of caster sugar (optional, adjust to your taste)

Preparation

  1. Roasting the hazelnuts:
    Preheat the oven to 180°C (350°F). Spread the hazelnuts on a baking sheet and roast them for 10 to 12 minutes, until golden brown and fragrant. Once the hazelnuts have cooled, rub them in a clean tea towel to remove the skins.
  2. Blend the hazelnuts.
    In a blender or powerful food processor, blend the hazelnuts until you obtain a smooth and creamy paste. This may take a few minutes; the hazelnuts will first become powdery, then release their oil and transform into a paste.
  3. Add the chocolate.
    Melt the milk chocolate and dark chocolate in a double boiler or in the microwave. Add it to the hazelnut paste, along with the condensed milk, hazelnut oil, cocoa powder, and salt. If you'd like a slightly sweeter paste, add the sugar and blend again to thoroughly combine all the ingredients.
  4. Blend until smooth.
    Blend for a few more minutes to ensure all the ingredients are well combined and the batter is smooth and creamy. If you prefer a thinner batter, add a little more oil or condensed milk.
  5. Store and enjoy!
    Transfer the spread to an airtight container and store it in the refrigerator. It will keep for about two weeks, but it's so good that it often disappears long before then!
