The pear coulis is a light and delicate preparation, ideal for accompanying ice cream, pancakes or desserts. Its soft and slightly vanilla flavor goes perfectly with creamy or fruit ice.

Ingredients :
- 3 ripe pears
- 50 g of sugar (adjusting according to the softness of the pears)
- 1 tablespoon of lemon juice (to avoid oxidation)
- 50 ml of water
- 1 teaspoon vanilla extract (optional)
Preparation :
- Prepare the pears
peel and seed the pears, then cut them into small pieces. If the pears are very ripe and juicy, you can reduce the amount of water. - Cook the pears
in a small saucepan, put the pear pieces with the sugar, water and lemon juice. Heat over medium heat and cook for about 10 to 15 minutes, until the pears are very tender. - Mixing
removes the pan from the heat and mixes the pears with a plunging blender or a blender until you get a smooth texture. If you want a perfectly smooth coulis, pass it through a fine colander. - Add the vanilla (optional)
if you want to bring a sweet and fragrant note, adds the vanilla extract and mixes well. - Let cool
let the coulis cool to room temperature before pouring it into an airtight container. It will keep in the refrigerator for about a week.
