The pink chocolate coulis is a colorful and sweet alternative to traditional chocolate. It is ideal for coating ice cream, desserts or even to bring an original touch to drinks. This coulis is made with Ruby chocolate, a naturally pink chocolate with fruity and slightly tart notes.

Ingredients :
- 150 g of Ruby chocolate (or white chocolate with a few drops of pink coloring if you can't find Ruby chocolate)
- 100 ml of whole liquid cream
- 1 tablespoon of milk (to adjust the texture)
- 1 teaspoon vanilla extract (optional)
Preparation :
- Heat the cream
in a small saucepan, heat the cream over low heat. Do not boil it, but let it heat enough so that it can melt the chocolate. - Add the Ruby chocolate
removes the pan from the heat and adds the Ruby chocolate (or white chocolate with a few drops of pink coloring) cut into pieces. Let him melt in the hot cream for a few minutes. - Mix until you get a smooth coulis
stir gently until you get a smooth and creamy sauce. If you want a more fluid coulis, gradually adds the milk, stirring well to adjust the consistency. - Add the vanilla (optional)
to enhance the flavors, you can add a teaspoon of vanilla extract, which will bring a subtle and soft note to your pink coulis. - Let cool slightly
let the coulis cool at room temperature before using it to coat your ice cream. It keeps in the refrigerator for about a week in an airtight container.

My Personal Tip:
This pink chocolate coulis is perfect for coating a strawberry, vanilla or coconut ice cream. It also works very well with red fruit ice for an impressive visual effect and fruity contrast. If you want to surprise even more, adds pibs of dried fruit or white chocolate chips for a crunchy texture. Personally, I like to use it to decorate milkshakes or spiral ice cups!
