Ingredients :
- 1 pink pitaya (dragon fruit)
- 200 g of sugar
- 200 ml of water
- 1 tablespoon of lemon juice (optional, to balance the acidity)
Preparation :
- Prepare the pitaya.
Cut the pitaya in half and scoop out the flesh with a spoon. Cut the flesh into pieces to facilitate cooking. - Cook the pitaya.
In a saucepan, place the pitaya pieces with the water and heat over medium heat. Let it cook for about 10 minutes, until the fruit becomes tender and releases its juice. - Filter the mixture.
Pass the mixture through a fine-mesh sieve or strainer to remove any small pieces of fruit and obtain a smooth liquid. Use the back of a spoon to press the dragon fruit and extract all the juice. - Add the sugar and lemon juice.
Return the dragon fruit juice to the saucepan and add the sugar. Heat over low heat, stirring until the sugar is completely dissolved. If you prefer a more tangy flavor, add the lemon juice at this point. - Let it simmer.
Let the syrup simmer gently for about 10 to 15 minutes so that it thickens slightly. - Let it cool.
Allow the syrup to cool to room temperature before pouring it into an airtight container. It will keep in the refrigerator for approximately 1 to 2 weeks.
