Preparation :

  1. Prepare the pitaya
    Cut the pitaya in half and scoop out the flesh with a spoon. Cut the flesh into pieces to make cooking easier.
  2. Cook the pitaya

  4. Add the sugar and lemon juice.
    Return the dragon fruit juice to the pan and add the sugar. Heat over low heat, stirring until the sugar is completely dissolved. If you prefer a more tangy taste, add the lemon juice at this point.
  5. Let it simmer
    Let the syrup simmer gently for about 10 to 15 minutes to thicken slightly.
  6. Let cool
    Allow the syrup to cool to room temperature before pouring it into an airtight container. It will keep in the refrigerator for about 1 to 2 weeks.
