Ingredients :
- 1.5 kg of quinces (approximately 4 to 5 large quinces)
- 1.5 liters of water
- 1.2 kg of sugar (adjusted according to the weight of the extracted juice)
- The juice of a lemon
Preparation :
- Prepare the quinces.
Start by washing the quinces thoroughly to remove the fuzz covering them. Cut them into quarters without peeling them or removing the seeds, as they contain natural pectin which helps the jelly to set. - Cook the quince.
Put the quince pieces in a large saucepan with the water and bring to a boil. Simmer over low heat for about 40 to 50 minutes, until the quince is very tender and starting to break down. - Strain the juice.
Once the quinces are cooked, pass everything through a sieve or cheesecloth to collect the juice. Let it drain without pressing to obtain a clear juice (pressing could make the jelly cloudy). Measure the amount of juice obtained. - Add the sugar.
For every liter of extracted juice, add approximately 800g of sugar. Return the juice and sugar to a saucepan and add the lemon juice. Heat over medium heat, stirring gently to dissolve the sugar. - Cooking the jelly:
Bring the mixture to a boil and cook until the jelly sets. This takes about 25 to 30 minutes. You'll know the jelly is ready when a few drops placed on a cold plate set quickly. If it remains liquid, cook it a little longer. - Jarring:
Once ready, pour the hot jelly into sterilized jars and seal immediately. Let the jars cool to room temperature before storing.
