Ingredients :

  • 1.5 kg quinces (about 4 to 5 large quinces)
  • 1.5 liters of water
  • 1.2 kg of sugar (adjusted according to the weight of the juice extracted)
  • The juice of a lemon

Preparation :

  1. Prepare the quinces
    Start by washing the quinces well to remove the fuzz that covers them. Cut them into quarters without peeling them and without removing the seeds, as they contain natural pectin which helps to gel the jelly.
  2. Cook the quinces
    Put the quince pieces in a large saucepan with the water and bring to the boil. Cook over low heat for about 40 to 50 minutes, until the quinces are very soft and starting to fall apart.
  3. Filter the juice
    Once the quinces are cooked, pass everything through a sieve or cheesecloth to collect the juice. Let it drain without pressing to obtain a clear juice (pressing could make the jelly cloudy). Measure the quantity of juice obtained.
  4. Add sugar
    For each liter of juice extracted, add approximately 800 g of sugar. Return the juice and sugar to a saucepan and add the lemon juice. Heat over medium heat, stirring gently to dissolve the sugar.
  5. Cooking the jelly
    Bring the mixture to the boil and cook until the jelly sets. It takes around 25-30 minutes. You'll know the jelly is ready when a few drops poured onto a cold plate quickly set. If it remains liquid, let it cook a little longer.
  6. Place in jar
    Once ready, pour the hot jelly into sterilized jars and close immediately. Allow the jars to cool to room temperature before storing.
