What you need:
- 200 ml of whole liquid cream
- 150 ml of whole milk
- 80 g of sugar
- 2 bergamot lemons (zest + juice)
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 teaspoon of vanilla extract
Preparation :
- Thyme infusion : In a small saucepan, heat the milk and cream over low heat. Add the thyme leaves and let it infuse gently for about 10 minutes, so that the thyme releases all its flavors. If using dried thyme, reduce the infusion to about 5 minutes. Remove from the heat and filter the mixture to remove the thyme leaves.
- Prepare the lemon mixture : Finely grate the zest of the bergamot lemons and squeeze them to obtain approximately 80 ml of juice. Add the lemon zest and juice to the thyme-infused milk-cream mixture. Also add the sugar and vanilla extract, then mix well so that the sugar dissolves completely.
- Let it cool : Let the mixture cool to room temperature, then place it in the refrigerator for at least an hour so that it is completely cold before freezing.
- Freezing : Pour the mixture into the Ninja Creami pot and put it in the freezer for 24 hours.
- Transformation into ice cream : After 24 hours, place the jar in the Ninja Creami and use the “Ice cream” mode. If the texture seems too firm, add a tablespoon of milk and run a Re-spin cycle to obtain a very creamy consistency.
