Ingredients :
- 100g of unsalted pistachios
- 2 tablespoons of honey
- 150 ml of whole liquid cream
- 1 tablespoon of sugar
- 1 pinch of salt (optional)
- 1 teaspoon vanilla extract (optional)
Preparation :
- Prepare the pistachios.
If your pistachios aren't already shelled, remove their skins by quickly plunging them into boiling water, then rubbing them with a cloth. Next, blend them in a blender or food processor until you get a smooth paste. - Prepare the coulis.
In a small saucepan, combine the pistachio paste with the heavy cream and honey. Heat gently, stirring regularly. Add sugar to balance the sweetness, and a pinch of salt if you want to enhance the pistachio flavor. - Simmer.
Let the mixture heat for about 5 minutes, without boiling, until it is smooth and creamy. If you want a milder flavor, add the vanilla extract at this point. - Filter the mixture (optional)
If you prefer a perfectly smooth coulis, you can filter the mixture through a fine sieve to remove any pistachio pieces. - Let it cool.
Allow the coulis to cool slightly before pouring it over your ice cream. This coulis can be stored in the refrigerator for about a week in an airtight container.
