The strawberry-rhubarb ice is a perfect wedding between the freshness of the strawberries and the tangy little touch of the rhubarb. It is a creamy, light and deliciously fruity dessert, ideal for lovers of summer flavors.

Ingredients :

  • 100 g fresh or frozen strawberries
  • 200 g of rhubarb (fresh or frozen)
  • 70 ml of light liquid cream
  • 70 ml of whole milk
  • 2 tablespoons agave syrup (or adjust to taste)
  • 1 tablespoon of lemon juice
  • 1 small pinch of salt (optional)

Preparation :

  1. Prepare the rhubarb
    if you use fresh rhubarb, peel it and cut it into small pieces. If you use frozen rhubarb, let it thaw a little. Cook the rhubarb in a saucepan with a spoon of agave syrup and a little water over low heat for 5 to 10 minutes, until it becomes tender and compote. Let cool.
  2. Prepare the strawberries
    wash the strawberries well, hull them and cut them into pieces. If you use frozen strawberries, let them thaw slightly.
  3. Mixes ingredients
    in a blender, adds strawberries, cooked rhubarb, cream, milk, agave syrup, lemon juice and a small pinch of salt. Mix well until you get a smooth and homogeneous texture. The fruity fragrance will already make you want to immerse the spoon!
  4. Pour into the Ninja Creami container

  5. Turbine with the Ice Cream program
    Once the preparation is well frozen, inserts the container in the Ninja Creami and selects the "Ice Cream" . You will get a perfectly creamy ice cream in a few minutes.
  6. Respin tip
    If the ice is a little too firm after the first cycle, uses the "Respin" and adds about 30 ml of milk to make the texture even more creamy.

My Personal Tip:

For an even more greedy touch, you can serve this ice cream with a few pieces of fresh strawberries or a strawberry coulis. If you want to add a little crunch, grilled almond shards or crumble crumbs will be perfect!
