Sage, with its slightly peppery and camphoraceous aroma, lends a unique and refined touch to this syrup. Perfect for drizzling over ice cream or enhancing desserts, this sage syrup pairs wonderfully with fruity or even creamy flavors. It can also be used in drinks for an unexpected burst of freshness!

Ingredients :
- 250 ml of water
- 200 g of sugar
- 5 to 6 fresh sage leaves (you can add more according to your taste)
- 1 tablespoon of lemon juice (optional, for a boost of zest)
Preparation :
- Heat the water and sugar
In a small saucepan, combine the water and sugar. Heat over medium heat, stirring regularly, until the sugar is completely dissolved. - Add the sage.
Once the sugar has dissolved, add the sage leaves to the saucepan. Let it infuse gently over low heat for about 10 minutes so the sage leaves release all their aromas. If you want a more intense flavor, feel free to let it infuse a little longer. - Add the lemon juice (optional)
If you want a little tangy note to balance the sweetness of the syrup, add a tablespoon of lemon juice at the end of cooking. - Filter the syrup.
Remove the pan from the heat and pass the syrup through a fine sieve to remove the sage leaves. - Let it cool.
Allow the syrup to cool to room temperature before pouring it into an airtight container. It will keep in the refrigerator for about a week.
