Preparation :

    If you are using fresh cherries, pit them. If they are frozen, make sure they are completely thawed before you begin.
  2. Cook the cherries.
    In a saucepan, combine the cherries, water, and sugar. Heat over medium heat, stirring regularly, until the sugar is dissolved and the cherries begin to break down. This will take approximately 10 minutes.
  3. Filter the mixture.
    Pass the mixture through a fine sieve or strainer to remove the cherry pieces and keep only the juice. Press the cherries well to extract all the juice and flavor.
  4. Let it simmer.
    Return the strained cherry juice to the saucepan and let it simmer gently for about 10 minutes to thicken the syrup slightly. Add the lemon juice at this point if you want a more tangy touch.
  5. Let it cool.
    Remove the syrup from the heat and let it cool to room temperature before pouring it into an airtight container. It will keep in the refrigerator for about 1 to 2 weeks.
