Inspired by the famous Black Forest dessert, this coulis combines the richness of dark chocolate with the sweetness and tartness of cherries, creating a perfect sauce to drizzle over ice cream, crepes, or cakes. It's ideal for vanilla, chocolate, or even yogurt ice cream.

Ingredients :
- 150g of dark chocolate (70% cocoa)
- 100 ml of full liquid cream
- 100g of pitted cherries (fresh or frozen)
- 2 tablespoons of sugar
- 1 tablespoon of kirsch (optional, for a more authentic taste)
- 1 tablespoon of milk (optional, to adjust the texture)
Preparation :
- Prepare the cherry compote.
In a small saucepan, combine the pitted cherries and sugar. Heat over medium heat for 5 to 10 minutes, until the cherries begin to break down and the juices thicken slightly. Mash the cherries with the back of a spoon to achieve a compote-like consistency. If using kirsch, add it at this point. - Heat the cream.
In another saucepan, heat the heavy cream over low heat without bringing it to a boil. Remove the saucepan from the heat as soon as the cream is hot. - Add the chocolate.
Add the chopped dark chocolate to the warm cream and let it melt without stirring immediately. After a few minutes, gently stir until you have a smooth chocolate sauce. - Stir in the cherries.
Add the cherry compote to the melted chocolate mixture and stir well to incorporate the fruity flavors into the coulis. If you prefer a thinner coulis, you can add a tablespoon of milk to adjust the consistency. - Let it cool.
Allow the coulis to cool slightly before pouring it over your ice cream or desserts. It can be stored in the refrigerator for about a week in an airtight container.
