Ingredients :

  • 150g of dark chocolate (70% cocoa)
  • 100 ml of full liquid cream
  • 100g of pitted cherries (fresh or frozen)
  • 2 tablespoons of sugar
  • 1 tablespoon of kirsch (optional, for a more authentic taste)
  • 1 tablespoon of milk (optional, to adjust the texture)

Preparation :

  1. Prepare the cherry compote.
    In a small saucepan, combine the pitted cherries and sugar. Heat over medium heat for 5 to 10 minutes, until the cherries begin to break down and the juices thicken slightly. Mash the cherries with the back of a spoon to achieve a compote-like consistency. If using kirsch, add it at this point.
  2. Heat the cream.
    In another saucepan, heat the heavy cream over low heat without bringing it to a boil. Remove the saucepan from the heat as soon as the cream is hot.
  3. Add the chocolate.
