What you need:

  • 200 ml of full liquid cream
  • 150 ml of whole milk
  • 80 g of sugar
  • 4 to 5 organic clementines (zest + juice)
  • 100g of candied clementines (you can buy them or make them yourself)
  • A few meringues (about 4 to 5 small meringues)
  • 1 teaspoon of vanilla extract

Preparation :

  1. To prepare the ice cream base : In a saucepan, heat the milk and cream over low heat. Add the sugar and stir well until completely dissolved. Remove the saucepan from the heat.
  2. Add the clementines : Zest two clementines and squeeze them to obtain about 80 ml of juice. Add the zest and juice to the saucepan with the milk and cream mixture. Stir well to infuse everything with these lovely citrus flavors. Also add the vanilla extract for a sweeter taste.
  3. Allow to cool : Let the mixture cool to room temperature, then place it in the refrigerator for about an hour so that it is very cold before freezing.

  5. Prepare the candied clementines and meringues : Meanwhile, cut the candied clementines into small pieces. Also break the meringues into large pieces. You can keep them aside to add just before serving or incorporate them into the ice cream.

Once the ice cream is ready, add the candied clementine pieces and meringue shards. Use the "Mix-ins" mode to gently incorporate them without crushing them.
