Preparation :

  1. Dilute the syrup.
    In a small saucepan, mix the raw agave sap with water to make it more fluid and easier to use. Heat it gently to thicken it slightly.
  2. Cooking the syrup
    : Heat the mixture over low heat for 5 to 10 minutes without bringing it to a boil, stirring regularly. If you wish to add a tangy note, stir in the lemon juice at this stage.
  3. Thickening:
    Continue heating until the mixture thickens slightly. It should have a fluid consistency, but be slightly thicker than water. Do not allow the syrup to caramelize, as it will lose its delicate flavor.
  4. Let it cool.
    Remove the saucepan from the heat and let the syrup cool completely to room temperature. Once cooled, pour it into an airtight bottle and store it in the refrigerator.
