Blackberry coulis, with its sweet and tangy flavor, is a perfect addition to ice cream. It pairs particularly well with creamy ice creams like vanilla, yogurt, or chocolate. Easy to prepare, this coulis adds a lovely touch of freshness to your desserts.

Ingredients :
- 300g of fresh or frozen blackberries
- 50 g of sugar
- 1 tablespoon of lemon juice
- 2 tablespoons of water
Preparation :
- Prepare the blackberries.
If you are using fresh blackberries, start by rinsing them gently. If they are frozen, let them thaw slightly. - Cook the blackberries.
Put the blackberries in a small saucepan with the sugar, water, and lemon juice. Heat over medium heat and cook for about 10 minutes, stirring regularly, until the blackberries are very soft and begin to break down. - Blending and straining:
Blend the mixture with an immersion blender or in a blender until smooth. If you prefer a very fluid coulis, then strain it through a sieve to remove the seeds and obtain an even smoother texture. - Let it cool.
Allow the coulis to cool before pouring it into an airtight container. It will keep in the refrigerator for about a week.

My Personal Tip:
This blackberry coulis is incredible on yogurt or vanilla ice cream. Personally, I also love using it on dark chocolate ice cream; the combination of the blackberry tartness and the rich chocolate is just perfect.
