Ingredients :

  • 4 limes (approximately 200 ml of juice)
  • 300 ml of water
  • 400 g of sugar
  • 1 sachet of pectin (or 1 tablespoon of agar-agar)
  • The zest of 2 limes

Preparation :

  1. Prepare the limes.
    Start by extracting the juice from the limes. Also, zest two limes to enhance the flavor of the jelly.
  2. Making the syrup:
    In a saucepan, combine the water, lime juice, zest, and sugar. Bring to a boil over medium heat. If using pectin, add it at this point. Cook for about 5 minutes, stirring regularly.
  3. Add the pectin or agar-agar.
    If you are using agar-agar instead of pectin, dissolve it in a little water before adding it to the hot mixture. Continue cooking for another 2 to 3 minutes, stirring well to avoid lumps.
  4. Jelly test
    To know if your jelly is ready, do the cold plate test: pour a small amount of jelly onto a plate that has been previously placed in the freezer, and if it sets quickly, the jelly is ready.
  5. Jarring
    : Pour the hot jelly into sterilized jars, seal them, and turn them upside down to create a vacuum seal. Let them cool before storing.

My Personal Tip:

This lime jelly is divine with coconut or vanilla ice cream. Its acidity also pairs beautifully with red berry sorbets for a delightful contrast between sweet and tangy.
