Ingredients :

  • 6 to 8 ripe passion fruits
  • 80 g of sugar
  • 2 tablespoons of water

Preparation :

  1. Prepare the passion fruit.
    Cut the passion fruit in half and scoop out the pulp with a spoon. It's this pulp, full of small black seeds, that gives the coulis its distinctive character.
  2. Heat everything up.
    Put the passion fruit pulp in a saucepan with the sugar and water. Heat over medium heat, stirring gently. Let it cook for about 5 to 7 minutes, until the mixture becomes slightly syrupy. If you find the coulis too sweet for your taste, you can add a spoonful of lemon juice to balance it.
