Fruit mousse is an explosion of freshness in your mouth. Whether made with strawberries or raspberries, this mousse is light, fruity, and perfect to accompany vanilla ice cream or frozen yogurt. Plus, it's quick to make and requires only a few simple ingredients.

Ingredients :

  • 200g of strawberries or raspberries (or a mixture of both)
  • 50g of caster sugar (adjust according to the sweetness of the fruit)
  • 1 tablespoon of lemon juice
  • 200 ml of very cold, full-fat liquid cream
  • 1 sheet of gelatin (optional, for a firmer mousse)

Preparation :

  1. Prepare the fruit.
Start by washing the strawberries or raspberries, then blend them with the sugar and lemon juice until you have a smooth puree. If you're using raspberries and want a seedless mousse, pass the puree through a sieve to remove the seeds.
  2. Optional: Prepare the gelatin.
If you want a slightly firmer mousse, soften the gelatin sheet in cold water for about 5 minutes. Squeeze out the excess water and melt it in a small saucepan over low heat, then stir it into the warm fruit puree.
  3. Whip the cream into stiff peaks.
In a chilled bowl, whip the heavy cream until stiff peaks form. It's important that the cream is very cold to whip easily.
  4. Incorporate the fruit puree.
Once the whipped cream is ready, gently fold in the fruit puree, lifting the cream with a spatula to avoid deflating the mousse. Mix gently until you obtain a smooth and airy mousse.
  5. Let it set in the refrigerator. Pour
the mousse into small glasses or jars, then let it set in the refrigerator for at least 2 hours. If you added gelatin, it will be a little firmer once chilled.
