If you like slightly daring combinations, you'll love this ricotta, feta, and black olive ice cream . It's fresh, creamy, and the salty twist of the black olives adds a really nice Mediterranean touch! I know, it's far from classic sweet flavors, but trust me, this savory dessert is perfect for an original appetizer or even as a side dish with a salad. With Ninja Creami, the texture is always impeccable.

Ingredients :
- 200g of ricotta cheese (for a nice creamy texture)
- 100g of feta cheese (for a slightly salty and intense flavor)
- 100 ml of full liquid cream
- 2 tablespoons of extra virgin olive oil
- 50g of black olives (pitted and finely chopped)
- A pinch of black pepper and some spices, I used herbs de Provence!
- A zest of lemon (optional, but adds a nice touch of freshness)
Preparation :
- Mix the ricotta-feta base.
In a bowl, combine the ricotta, crumbled feta, cream, and olive oil. If you prefer an ultra-smooth texture, feel free to blend everything. I love the aroma of olive oil combined with cheese; it immediately reminds me of summer aperitifs by the sea. Add pepper and a little lemon zest to enhance the flavors (lemon really is the little extra that makes all the difference!). - Add the olives.
Gently fold the chopped black olives into the mixture to distribute the pieces evenly. The olives add a touch of saltiness that contrasts nicely with the mildness of the ricotta and feta. You'll see, every spoonful is a delightful surprise. - Pour into the Ninja Creami container.
Transfer the mixture into the Ninja Creami container, being careful not to exceed the MAX FILL (always a helpful reminder for a perfect texture). Then, place it in the freezer for 24 hours . A little patience… but it's worth it! - Churn with the Ice Cream program.
Once the 24 hours have passed, insert the container into the Ninja Creami and start the "Ice Cream" . A few minutes later, you'll have a wonderfully smooth ice cream with this unique blend of almond, feta, and olives. - Respin Tip:
If the texture is too firm after the first cycle, use the Respin to make it creamier. For an even softer texture, add a drizzle of olive oil or a little cream.

My Personal Tip:
This ice cream is perfect served with fresh herbs like basil or thyme for a touch of freshness. To accompany it, you can try toasted bread croutons, or even a drizzle of honey for those who like sweet and savory! A tiny bit of balsamic vinegar when serving is also a combination worth trying for an extra touch of indulgence. I promise you, it always surprises guests!
There you go, your ricotta, feta and black olive ice cream is ready! It's a perfect option for an original aperitif, with Mediterranean flavors that are truly out of the ordinary.
